Looking for a quick meal during these busy summer nights? Try one of these:
- Pulled Pork; buy it cooked ahead in your meat section.
- Fish Fillets; bake in the oven while you pour yourself a glass of wine. Put your fillets (frozen tilapia works great) on a baking sheet, sprinkle with taco seasoning and put in the oven at 350 for about 20 minutes. If it starts to smell fishy in your house-stop your overcooking it-use a thermometer. The temperature should be 140 when you remove it from the oven, you will see it start to flake apart.
- Rotisserie Chicken; shred and add taco seasoning.

- Shredded coleslaw
- Diced tomatoes-canned works in a pinch
- Shredded cheese
- Black beans
