Crazy For Corn!

It’s a great time for corn, what is  your favorite way to prepare it?  A few of mine…

  • Grill it;  Soak it in the husks in a pot of water for a few hours and then grill.  
  • Roast it;   Remove husks and brush with olive oil, garlic powder and parmesan cheese, wrap in aluminum foil and roast, it keeps all the delicious flavors in the corn!  
  • Boil it; for a short few minutes only and then brush with melted butter.
  • Salsa; corn, black beans, jicama, extra virgin olive oil, chili powder and lemon juice.  Best served with blue corn tortilla chips. 
  • Side; mexican street corn-omg wow!  Try it today, spread a little mayonnaise, chili powder, lime juice on your corn and sprinkle with crumbled cotija cheese-yum, yum, yum!
  • Dinner salad; grilled corn, tomatoes, basil pesto and cheese tortellini.
  • Slicing corn; Put it in a bowl and then slice it off the cob, no more run away kernels!
