Buffalo Chicken Dip-2 Easy Ways!!!

Happy Football Season! Or whatever season it might be for you, it is always a good time for Buffalo Chicken Dip. When I make it, I tend to make a lot and often a couple of extra batches.  I love setting some of the deliciousness aside for another time that week.  It is great reheated or add to your favorite burrito or as another yummy appetizer like my Buffalo Chicken Bites listed below…

Easy Buffalo Chicken Dip-adapted from my friend Paul who started me on my Chicken Dip addiction…

Makes about 3 cups-a good amount!

1 can (12.5oz) diced cooked chicken breasts, drained

1.5 packs of cream cheese (12oz)

1/2 cup Mexican cheese, shredded

1/2 cup sharp cheese, shredded

1/2 cup of your favorite wing or spicy sauce

1/4 cup Blue Cheese Dressing

2 Tbsp blue cheese crumbles

Diced celery

Preheat oven to 350 degrees.  

Mix everything together in a bowl and place in your baking dish.  Bake for about 30 minutes.
Garnish with crumbled blue cheese and diced celery. 

Tip:  Replace the canned chicken with Rotisserie Chicken for more awesome flavor!


Buffalo Chicken Bites

Makes 24

1 cup of the Easy Buffalo Chicken Dip

1 (8-oz.) tube crescent dough

Cooking spray, for pan

Flour, for surface

2 Tbsp blue cheese crumbles

Diced celery

Preheat oven to 375 degrees.

Grease a mini muffin tin with cooking spray.
On a lightly floured surface, roll out crescent dough, and pinch together
seams.
Cut into 24 squares. Place squares into muffin tin slots.
Add a small spoon of the chicken dip.  
Sprinkle on blue cheese crumbles.
Bake until the crescent pastry is golden, about 15 minutes.  Garnish with diced celery.
