National Quesadilla Day is September 25 – Easy, quick and delicious, no holiday needed for Quesadillas at our house, count me in!
The easy plan;
- Start with cooked ingredients. Except the cheese of course no need to cook that ahead of time. Flour tortillas come in so many shapes and flavors, experiment.
- Take one tortilla and lay it in a lightly greased pan. Add your cooked ingredients and put the second tortilla on. Push down with a spatula, sprinkle with garlic salt. Cook on medium heat covered for 1-2 min, flip and do the other side.
- Let them cool on a plate for a minute or two and cut with Kitchen Scissors easily.

Veggie Quesadillas
Grill veggies and fruit, then dice before placing on your tortilla, top with a drizzle of plain yogurt and a squeeze of lime.
Roast Beef Quesadillas
Fresh Roast Beef from the deli or even the frozen “steak um” style beef works great for these. Top with a sharp cheddar cheese and barbecue sauce.
Cheese Quesadillas
Good melting cheese like a Mexican shredded, served with a fruit salsa. Fruit salsas are easy to make, just small dice your favorite fruits and maybe drizzle with a little honey.
Buffalo Chicken Quesadillas
Buffalo Chicken Dip (an easy version to make this can be found on my Buffalo Chicken Dip 2 Easy Ways article) with a little extra blue cheese and serve with blue cheese dressing.
Fiesta QuesadillasSpread avocado on your tortillas and sprinkle with black beans, corn, diced jicama and a shredded white cojita or mozzarella cheese and Tajin Clasico Seasoning. Serve with sour cream with some extra Tajin Clasico Seasoning mixed in. I love that seasoning!
