Party Potatoes!

Check out these three party potato ideas or wait, why wait for a party?  These are great for any night of the week!

Italian Camp Potatoes

Tent camping helps you come up with all kinds of different recipes-especially in the middle of a storm with children in diapers-you should try it….During one of these times I was going to make fried potatoes for my family but did not have any oil.  I had Italian Dressing and they turned out amazing!

  • Potatoes, washed skin on, bite size dice
  • Italian Dressing
  • Onion, optional
  • Salt
  1. Fry onion first in Italian Dressing for a bit and add potatoes.  Two minutes before done add a little more dressing. If you cut your potatoes to large or are in a hurry you can cover to steam a bit but might not get as good caramelized flavor.

Cooking for a crowd? Cut them up a day prior and soak in bowl of water. They hold well after cooking as well.

Hasselback Potatoes 

They look pretty fancy but are so easy to do. By slicing your potatoes almost all the way through you end up with a “fan” looking potato and lots of spaces for some delicious flavor.

  1. Place your cleaned potato on a cutting board. Use a round thin object like a steel or large handled spoon to prevent the knife from cutting all the way through.  
  2. Fan them out a bit and drizzle melted butter in all the spaces and sprinkle on a topping.  A few ideas;
  • Fresh chopped rosemary
  • Cracked Pepper Blend seasoning
  • Cajun seasoning
  • Ranch seasoning 

3.   Wrap in foil and bake at 350 degrees for one hour.

Cooking for a crowd?  These are great made a day ahead, just cook the day of your party.

Mighty Mashed Potatoes Mix-In’s

After you make your favorite mashed potato recipe mix in a couple of these:

  • Sour Cream
  • Roasted Garlic (favorite!)
  • Cheddar Cheese
  • White Pepper
  • Crumbled Bacon
  • Horseradish

Cooking for a crowd? Your slow cooker holds these perfectly.
