Doesn’t a “midnight breakfast” taste great? Maybe not always served at midnight but some time later in the eve as a part of fun time with friends, always with good memories! It doesn’t have to be complicated, just filling and fun. Your guests want to help, it’s okay to let them so you can get it on the table quick.
With just a little planning enjoy a Were just hungry Bar, choose a couple of these and serve Buffett style:
- Eggs:
- Scrambled is the easiest of course and you can add any kind of mix-ins for more flavor. Cheese, chopped peppers, broccoli, mushrooms…
- Egg cups are just fun; mix up some eggs and add in a two items like cooked sausage and mozzarella cheese. Spray a cup-cake pan and bake at 350 for 15 min or so until set.
- Meat:
- Breakfast links are great for a small crowd. For your larger crowds use Italian sausage links. Cook them in the oven for ease and less mess. Slice in small rounds to serve.
- Ham steaks are a little cheaper than the small Canadian ham, just cut in quarters.
- Bacon of course is just yum all day. Cook in the oven for less mess.
- Potatoes:
- Italian potatoes are a favorite, just sauté your diced potatoes in Italian Dressing.
- Hash brown potatoes are easy and cheap…keep the frozen ones on hand and cook in the oven.
- Bread:
- A loaf of frozen garlic bread cut in small slices before baking. If you wait till after it’s hot to cut, well cutting anything hot with your hands can hurt!
- Leftovers:
- What’s in the fridge? Hungry friends will love it!
With a little more planning enjoy a Breakfast Burrito Bar:
- Scrambled eggs
- Cooked ham or bacon
- Black beans or refried beans
- Diced tomatoes-fresh or canned
- Salsa
- Tortillas
- Sour cream
- Hot sauce
What is your favorite time to enjoy “Midnight Breakfast”? After bowling? After a special night out with friends? After church? After prom? During a snow storm? After a Christmas light drive? As part of your New Year’s celebration?
Enjoy!
