Whether your hosting your Hawaiian Luau for a winter night event or the theme for your next game day party, remember the most important ingredient – fun! If cooking isn’t fun for you, I’ve listed a few shortcuts below and you can always enlist your friends to help. Another idea for your friends is ask them to come wearing summer clothes, luau gear or just their most brightest colors, it really adds to the festive mood!
Party Pork
The recipe is below with a few delicious options…
Rice
Rice is great on it’s own, your rum bbq sauce will flavor it or if you want to kick it up a bit a few tricks;
- Saute your rice before adding liquid.
- Add 1/2 water and 1/2 pineapple juice
- Add 1/2 water and 1/2 veggie stock
- Add caramelized onions
Roasted Veggies
Sweet Peppers cut into strips with a few sliced carrots roasted with a little oil and garlic salt are a perfect pairing for this.
Rummy BBQ Sauce
The recipe is below, you may have extra, it goes great on just about everything!
A couple of fun elements for your party;
A yummy dessert like a Pineapple Upside Down Cake.
Leis
Pina Coladas of course, some with rum, some without so everyone at your party can say cheers!
Party Pork
1 pork shoulder
4 Tbsp liquid smoke
2 garlic cloves peeled and minced
3 Tbsp kosher salt
1 good beer
- Put deep knife cuts in pork. Stuff garlic & salt in cuts and coat rest of pork with liquid smoke and then your favorite beer. Place in Roaster fat side up.
- Put in 250 oven covered for 12 hours.
- Uncover and cook at 450 about an hour to crisp additionally if needed.
- Remove from pan and let rest out of oven for 30-60 minutes. Shred and discard any fat that didn’t cook. Shredding is easily done with a pair of tongs in one hand and a fork in the other.
A few other options for your Party Pork:
- Buy the pulled pork already done at your favorite grocery or restaurant. It’s okay to do this, we can’t do everything.
- Use a pork tenderloin for smaller portions.
- Use a slow cooker for ease instead of the oven, but the flavor and texture will not be as great. Again, it’s okay-it will still taste great.
- Use a smoker if you have it and don’t have to shovel snow to get to it…My friend Doug insists this is the best way and like him maybe you don’t mind shoveling for the delicious flavor.
- Serve it at your party in a slow-cooker.
- Serve it on it’s own or use slider rolls or taco shells with all of the toppings.
Rummy BBQ Sauce
2 cans coke
1/2 cup ketchup
1/4 cup rum (use the good stuff, like Siesta Key Rum!)
3 Tbsp honey
2 Tbsp Worcester sauce
1/4 cup vinegar or more to taste
- Whisk all the ingredients together and bring to a quick boil on high. Reduce to a low simmer for an hour.
