Spring Into Veggies With Your Kids!
Right now I feel like eating all of the junk food and waking up when this craziness is over. Instead I’m trying to focus hard on eating more fruits and veggies. I know it might be hard to get fresh produce right now, but try to get creative with canned and frozen that you might already have.
Get your kids involved whenever you can.
- Let them help with prepping the food and let them try along the way. They might like cauliflower raw but not cooked.
- Don’t say “you have to have spinach” instead try something like “would you like spinach or broccoli?”.
- Before you add your veggies let the kids slice them up, even if your chopping or pureeing them. Kids can use a butter knife to cut up most veggies, just go over a few good knife skills first. Watch a quick cooking video with your kids on Chefs slicing with a Chefs knife, the kids can do it the same way with a butter knife. Their primary hand should wrap around the handle with the thumb on the top of the bottom of the blade and mid index finger on other side. Don’t forget to get your other hand in the right position with it in a fist with thumb enclosed under fingers.
A few add in ideas;
- Add veggies like asparagus or tomatoes to your quesadillas…
- Add pureed veggies like cauliflower to mashed potatoes or carrots to your sauce…
- Add spinach in brownies…
- Add roasted veggies to your rice or pasta…
- Add corn to your tomato salsa…
- Add bananas to pancakes…
- Add asparagus to scrambled eggs…
- Add strawberries or spinach to smoothies…
As we start our Spring season let’s all try eating more veggies together and staying healthy!
