Quesadillas-the Queen of Leftovers
I try to keep burrito style wraps in the house at all times. Just add whatever you have left over and of course a little cheese and sauce of some sort. As for sauces remember dressings make great sauces too…
- Leftover pork with barbecue sauce and shredded cheddar…
- Leftover chicken with ranch dressing and bacon bits…
- Leftover veggies with teriyaki sauce and sesame seeds…
- Extra lunch meat like roast beef or turkey with salsa and cheese…
Pasta could be the King of Leftovers
You can add just about anything to leftover pasta…
- Leftover veggies
- Leftover meats
- Leftover shrimp (just mix in last minute)
- Walnuts taste great in pasta
- Turn your leftover pasta into a whole new dish by baking it in the oven with leftovers mixed in.
Stuffed Peppers-yum a favorite for sure!
Add what you have, break the routine and consider;
- Leftover chicken with blue cheese and wing sauce…
- Leftover sushi rice, leftover meatballs, onions, beans and salsa, like my picture here it was awesome!
Soup Special
What’s that old story? Stone soup? Just about anything goes (except stones of course). For a quick soup special:
- If you have onion start off by sautéing in a little oil for a few minutes. If not just add some onion powder instead.
- Add your broth and let simmer for a bit. It’s good to keep good old broth bouillon cubes on hand.
- Mix in a little more seasoning, just a little like garlic or rosemary. Add your leftovers bring to a simmer for a few minutes and enjoy!
Fruit-leftover fruit? Not possible? Oh yes it is!
So you purchased a lot of fruit, let’s say plums. They tasted great the first 3 days and now your tired of them and they don’t look as good…
- Puree them into a sauce-yum over fish or pork…
- Puree them and freeze them for a refreshing ice cube in a seltzer water…
- Dice and serve over pancakes…
