Thinking about a rotisserie chicken for dinner? Me too, whether your on a budget, want some comfort food, something quick or need a reason to celebrate National Rotisserie Chicken Day (6/2), it fits the bill for all of that.
If you looking for super easy it doesn’t get any easier than the Chicken Craisin Salad and the Chicken Wraps Greek Style. A little more is needed for Chicken Dinner Dash but worth it. Buffalo Chicken Dip and the Volta Portuguese Chicken Soup recipes definitely take more time but using chopped rotisserie chicken is a nice time saver on the road to those delicious recipes.
Chicken Craisin Salad
Remove all the chicken from the rotisserie chicken and chop well. Combine lettuce, grape tomatoes, cucumbers and croutons for your salad. Top with chicken, craisins and ranch or blue cheese dressing.
Chicken Wraps Greek Style
Remove all of the chicken from the rotisserie chicken and chop. Toss with Greek Salad Dressing. Lay chicken on a wrap and add feta cheese, lettuce, chopped kalamata olives, and chopped pepperoncini, roll and enjoy.
Chicken Dinner Dash
Sometimes we just don’t have the time or energy to cook all day and make a big Sunday dinner. This is a quicker way to enjoy this favorite comfort meal. When you buy a rotisserie chicken, then, frozen corn, then a jar of gravy…STOP…don’t buy prepared mashed potatoes. Okay if you must go ahead there are some better ones out in the market but you would really like these home-made mashed potatoes.
Mashed Potatoes
3 Russet Potatoes, washed leave skin on.
2 Tbsp butter
1/4-1/2 cup milk or sour cream
Salt & Pepper
- Add potatoes to cold pot of water and bring to a rolling boil. Reduce to a simmer and cook until fork tender, 20 minutes or so.
- Remove and cool for a few minutes.
- Use a butter knife and the skin should peel off easily. By boiling with skin on it helps keep potatoes together as it cooks all the way through.
- Add potato back to the pot and mix in butter, milk salt & pepper.
- Mash for a few lumps or use a hand mixer for smooth as silk potatoes.
