If appetizers could win an award this tray would be it. Lemony Hummus, Tasty Tzatziki Sauce, Artichoke Corn Dip and Olive Salsa. Try one or all four, your taste buds will thank you!
If you are looking for easy try the Lemony Hummus and the Tasty Tzatziki Sauce. If you have a little more time make the Artichoke Corn Dip and Olive Salsa. Serve with grilled pita bread and corn chips or a veggie tray.
- Grilled Pita Bread; lightly oil and garlic salt, throw on the grill for grill marks.
- Corn Chips; try the blue ones!
- Veggie tray; well most of us know this one but add jicama for a new flavor 🙂
Olive Salsa
2 cups kalamata pitted olives sliced
1/2 cup pepperoncini peppers sliced
1 block (about 8 oz) of Halloumi (Grilling Greek Cheese)
1 red pepper, whole
1/4 cup olive oil
1 Tbsp spicy Tomato Garlic Oil
- Slice grilling cheese in half. Lightly oil red pepper and grilling cheese. Grill on high heat for just a couple of minutes to get grill marks.
- Dice red pepper and discard core and seeds.
- Gently mix everything together and serve.
Artichoke Corn Dip
1 can of artichokes, drained and chopped
2 corn on the cob, shucked
1 cup of sour cream
1 cup of mayo
1 lemon zest/juice
3 Tbsp of your favorite seasoning. Something like adobe or an everything seasoning works well.
- Grill corn on the cob with a little olive oil for some nice char flavor.
- Remove corn by slicing off the kernels – do it over a bowl and they all land there.
- Mix all together. Garnish with extra seasoning.
Lemony Hummus
3 cans garbanzo beans, drained
3 Lemons, zest & juice
3 Tbsp Garlic powder
1 Tbsp garlic salt
2 Tbsp Sesame Oil (I used this instead of traditional tahini paste)
1/4 cup extra virgin olive oil
Sesame seedsBlend everything well except sesame seeds.
- Garnish with extra lemon zest and sesame seeds.
Tasty Tzatziki Sauce
Makes about 2 cups
1 seedless cucumber, washed and chopped
1 cup greek yogurt
1 cup sour cream
2 Tbsp Fresh Dill chopped or 1 Tbsp dry
1 lemon zest and juice
2 tsp salt
- To remove any excess water from cucumber, put chopped cucumber on paper towel lined plate and lightly salt for 30 minutes. Dab with a paper towel after. Fyi-if you are thinking on skipping this step, don’t I have made that mistake before…
- Mix well and serve with pita, sliced cucumbers or chips.
