Toasty Pina Colada Jello Shots

My husband has become king of the bar-ask anyone who has had a “Volta Drink”.  He loves to experiment, especially with jello shots and his newest creation is a run-away hit!  Sometimes I get to help, but most often he is in his own world in the creation.  When you are mixing drinks or cooking, are you an all hands on deck cook or do you prefer to run solo? 

Toasty Pina Colada Jello Shots

1 box pineapple jello

1.5 cups Siesta Key Toasted Coconut Rum

1 cup hot water

1/4 cup shredded coconut

1 jar cherries

  1. Remove cherry juice from cherry jar. Cover cherries with 1/2 cup rum. Put in the fridge and let it set for a day or two.
  2. Follow directions for jello but instead of adding cold water add 1 cup of rum with 1 cup of hot water.
  3. Fill jello shot cups with jello and remove rum soaked cherry from the jar and drop in the jello.
  4. Toast coconut carefully in the pan over medium heat. Continue to stir, don’t walk away, it will smoke a bit and if you walk away you will set off your fire alarms and it will not be good. Remove from the pan as soon as it is toasted.
  5. Cover and refrigerate for 4 hours.
  6. Remove lid, sprinkle with coconut & enjoy! 

Notes:

-Siesta Key Rum is the best, if you can’t find it you can substitute, but try really hard to find it, it’s worth the trip.  Try Total Wine & More.

-Pineapple Jello is crazy hard to find, we have had the most luck at small grocery stores and sometimes Walmarts.

-Save the leftover cherry rum juice for “cheery” rum juice.  Goes great as a shot or in a rum and coke.
