“Candy” Roasted Veggies

Roasted veggies can taste like candy! Ok maybe not candy but a close second πŸ˜‰ Roasting brings out the veggies natural sugars and helps caramelize them and give delicious flavor.

For perfect roasted veggies:

  • Preheat oven to 400 degrees
  • Spray baking sheet with nonstick spray
  • Cut the veggies in the same size
  • Toss veggies with a little herb oil and garlic salt and lay out on a pan.
  • Roast about 30 minutes-this will vary depending on the veggie, check them every 15 minutes a little browning-caramelization is good=flavor!

Veggies can be prepped ahead and roasted before dinner. They don’t have to be served “hot hot” warm is good.

Sauces served with veggies make a great pairing. We all know cheddar cheese over broccoli but how about seasoned tomato sauce with roasted cauliflower or a basil pesto drizzled over roasted peppers. 

Popular roasted veggies:

  • Cauliflower (like popcorn)
  • Carrots (toss with honey)
  • Asparagus
  • Peppers
  • Broccoli (if your into that kind of veg good for you, I avoid it at all costs)

Try me sometime roasted veggies (you will be happy you did):

  • Acorn or butternut squash
  • Onions 
  • Grape tomatoes
  • Mushrooms
