I have a confession….I can’t make meatloaf…. I can cook quite a variety of easy and hard recipes. I have taught thousands of people their way around the kitchen and learned from some pretty awesome Chefs. Meatloaf escapes me every time, I get side tracked and try to add this and that or I get a little over generous with some seasonings. My friend Karen has perfected meatloaf, often requested by Mike and I for her to make. Her meatloaf is kind of like her, straight to the point and made with love. It’s delicious and exactly how we remember it as one might as a child, just a good home-made memory in every bite.

Karen’s Meatloaf
2lbs 85% hamburger
1 egg
1 Tbsp minced onion
1/2 cup milk
1/2 cup ketchup
1 cup breadcrumbs
Non-stick spray
- Mix together all ingredients forming into loaf.
- Put in glass rectangle plan (use 9×11 or something close).
- Bake at 350 for one hour.
Karen said it’s really important to use the glass 9×11 pan so the grease goes away from the meatloaf, don’t use those loaf pans. She also said some of her friends might use a picante sauce or barbecue sauce instead of ketchup, but I say why mess with a good thing?
