Strawberry Star French Toast

Serves 6

12 pieces of cinnamon bread (almost whole loaf)

1 package of cream cheese, softened

1 quart of strawberries

1/4 cup pistachios, crushed

4 eggs

2 Tbsp cinnamon, divided

1 Tbsp sugar

Whip cream

Non-stick spray

  1. After washing your strawberries; leave 6 whole, slice 8 and chop 4.
  2. Mix your crushed pistachios with your cream cheese.
  3. Divide this mixture on your 12 pieces of bread and spread out.
  4. Top 6 slices of your bread with sliced strawberries and then place other piece of bread with cream cheese mixture on top, pressing firmly.
  5. Crack your eggs in bowl and lightly mix with fork, adding 1 Tbsp cinnamon.
  6. Spray your pan over medium heat with non-stick spray. 
  7. Gently dip your bread into the egg mixture, dripping of any excess and place in pan to brown about 3-4 minutes. 
  8. Flip, press down with your spatula and cook another 3-4 minutes.
  9. Let cool about 3-4 minutes and then slice in half with a serrated knife.  
  10. Mix remaining cinnamon with sugar, sprinkle over the top with diced strawberries.
  11. Add the whole strawberry to the plate and a little star of whip cream and enjoy!

If you would like to make this even quicker skip the decorating stages of the plates and just serve some extra strawberries, whip cream and cinnamon sugar at the table for everyone to top their own.  

This can be cooked ahead, great for company.  Put it in a pyrex dish covered with aluminum foil and just reheat in your oven at 350 for about 20 minutes until hot. 

This recipe came about when my friend Karen was visiting.  My husband Mike & her love their pistachios.  So I seriously had to hide a little bag when I was planning this recipe 😉 We developed this recipe to honor their beloved pistachio and it turned out amazing!
