4 cloves garlic
1 tsp vegetable oil
1lb elbow macaroni pasta
4 Tbsp butter
1/4 cup flour
6 cups milk
1 cup Guinness Beer or your favorite beer
1 Tbsp nutmeg
1 tsp pepper
2 tsp salt
1lb extra sharp cheddar cheese
1/2 lb swiss cheese
Topping
2 Tbsp butter, melted
1 tsp salt
1.5 cups panko bread crumbs
1/2 cup parmesan cheese
- Peel & dice garlic and add to a small oven proof dish with 1 tsp oil. Roast for 15 minutes in 375 degree oven.
- Cook pasta a little under done (al dente) and set aside.
- Whisk together roasted garlic, flour, milk, butter, nutmeg, pepper and salt over medium heat. Slowly add beer and continue whisking and cooking for 5 minutes.
- Remove from heat and stir in cheeses and pasta.
- Spray baking pan with non-stick spray and add mixture.
- Combine topping ingredients and divide evenly over the top.
- Bake at 375 degrees for 30 minutes.
