Dinner Party Side Dishes

Mac-Beer & Cheese

4 cloves garlic

1 tsp vegetable oil

1lb elbow macaroni pasta

4 Tbsp butter

1/4 cup flour

6 cups milk

1 cup Guinness Beer or your favorite beer

1 Tbsp nutmeg

1 tsp pepper

2 tsp salt

1lb extra sharp cheddar cheese

1/2 lb swiss cheese

Topping

2 Tbsp butter, melted

1 tsp salt

1.5 cups panko bread crumbs

1/2 cup parmesan cheese

  1. Peel & dice garlic and add to a small oven proof dish with 1 tsp oil.  Roast for 15 minutes in 375 degree oven.
  2. Cook pasta a little under done (al dente) and set aside.
  3. Whisk together roasted garlic, flour, milk, butter, nutmeg, pepper and salt over medium heat.  Slowly add beer and continue whisking and cooking for 5 minutes.
  4. Remove from heat and stir in cheeses and pasta.
  5. Spray baking pan with non-stick spray and add mixture.
  6. Combine topping ingredients and divide evenly over the top.  
  7. Bake at 375 degrees for 30 minutes.
