Banana Blueberry Muffins

Makes 12 Amazing Muffins

2 cups frozen blueberries

2 cups ripe mashed bananas (4-5 bananas)

2.5 cups flour

3/4 cup brown sugar

1 tsp cinnamon

1/2 tsp baking soda

1 tsp salt

2 eggs

1/2 cup canola oil

1/2 cup milk

Non-Stick Spray

Preheat oven to 450 degrees.

  1. Whisk (wet ingredients) oil, eggs, and milk together in one bowl.
  2. Stir (dry ingredients) in another bowl-flour, brown sugar, cinnamon, baking soda and salt together.  
  3. Make an indention in the center of the dry ingredient bowl (like a hole) and slowly add the wet ingredients slowly mixing to incorporate—don’t over mix—just enough to blend together.
  4. Fold in mashed bananas and blueberries with just a few stirs, again don’t want to over mix or muffins can become too hard when baked.
  5. Reduce heat to 375 degrees, spray muffin tins with non-stick spray.  Fill each cup almost to the top, they will not rise a ton, but be a dense delicious muffin.
  6. Bake for 10 minutes, turn pan, baked another 10-15 minutes until toothpick in center comes out dry.  Transfer to a cooling rack and wait patiently to enjoy.

Tip:  If you like a sweeter muffin, add 1/2 cup sugar to dry mix or sprinkle the top of your muffin before baking with sugar.  

P.S. many of you good bakers probably know a lot of these tips. I am not a baker, far from it…but trying here and there-sometimes with success like these–sometimes with no success, although a few laughs. So I added a lot of tips that other non-bakers may need to know.
