Breakfast Side Dishes

Horseradish Hashbrowns

Makes 6

2 Tbsp horseradish

1/4 tsp onion powder

1/4 tsp pepper

1/4 tsp cinnamon

1/4 tsp garlic salt

1 large potato, grated

1 Tbsp butter

1 egg

  1. After you grate your potato, add it to a clean towel and squeeze out the excess water.  Mix all ingredients together except the butter.
  2. Heat a saute pan on medium high heat and add butter.
  3. Form potato mixture into 6 patties and fry a few minutes on each side until golden brown.

I whipped up this quick new recipe this morning, super good.  A few learning’s…1 large potato makes a lot.  I made 4 patties, next time I will make 6 thinner patties.  Everyone says to use a clean towel to squeeze out excess water. Well why not a paper towel?  So I tried that, big mistake.  Lucky we didn’t end up with paper towel in our hash browns!  Use a clean towel.  Serve with on their own or with your favorite ketchup, my husband liked his with Curry Ketchup.

I believe frozen shredded potatoes would also work for this recipe. If you do use your grater, a bowl under as you grate makes it easy. I use my grater for potatoes and for cheese, I know some people use it for chocolate. If you need to purchase one, the link is below.
