Jicama & Strawberry Salad

Salad, serves 4-6

1/2 cup blue cheese crumbles 

8 cups spring mix lettuce

1 Jicama, peeled and diced

16 Grape tomatoes

1 cup maple pecan glazed nuts, chopped

1/2 cup sliced strawberries 

1/2 cup extra virgin olive oil

1/4 cup balsamic glaze

2 Tbsp white vinegar

2 Tbsp honey

1/2 cup diced strawberries

  1. Whisk all dressing ingredients except the strawberries vigorously.  Add strawberries after whisking.
  2. Toss salad ingredients and serve with dressing on the side.  

Notes:  the dressing makes more than enough for your salad.  You can use the extra served with more salad or even a topping for grilled chicken or fish. We served a piece of air fried snapper that I had coated in citrus garlic seasoning on top of this salad, yum!
