Easy Italian Breakfast Potatoes

Serves 4

3 large Russet potatoes

3 Tbsp Italian Dressing

1 tsp salt

  1. Chop potatoes in bite size pieces (somewhat similar size).
  2. Add potatoes to pan and drizzle with 2 Tbsp Italian Dressing and salt.
  3. Saute covered over med heat for 10 minutes.
  4. Check if the potato is done by breaking in half.
  5. Drizzle remaining Italian Dressing over potatoes and saute uncovered for about 5 minutes over medium high heat to caramelize finishing with incredible flavor.

These yummy potatoes came about when we were camping and I didn’t have any oil to saute them in over the fire.  So I grabbed Italian Dressing from the night before Salad and wow!  Great flavor, these are requested often for breakfast and dinner!
