Rosemary Goat Cheese Apricots

1 large log of goat cheese (8oz), softened

1 bag (6oz) of dried apricots, pits removed

2 sprigs of rosemary, leaves removed and chopped

These can be prepared two ways;

  • Stuffed Apricots; Mix rosemary in goat cheese and stuffing in Apricots.
  • Goat Cheese Apricot Bites; Mix goat cheese, rosemary and chopped apricots and roll into bite size balls. 

Notes; if you hold the sprig of a rosemary twig and pull down the leaves will easily remove.  Most dried apricots have the pit removed which leaves a nice hole for stuffing. If the hole is not big enough carefully use a knife to increase the size.
