Baked Egg Bites

on

6 cooked sausage patties 

8 eggs

1/2 cup shredded cheese

  1. Spray muffin tin with non stick spray.
  2. Whisk eggs and chop sausage. Divide sausage into 12 muffin tins. Sprinkle half of the cheese on each. Spoon egg into each cup. Sprinkle with remaining cheese.
  3. Bake at 400 until done about 13 minutes. 

Serve for a crowd or freeze for later.

Let cool and wrap in paper towel and then aluminum foil and freeze. 

Remove from freezer and remove foil and paper towel. Wrap in a damp new paper towel and microwave until heated thru about a minute.
