Food represents family, memories are made and traditions are shared. Pat, my mother-n-law had a large family to cook for and this was one of her go to dishes. I still don’t know how she did all she did, often without the modern comforts we have now. Everyone loved it and often make it for their families now. My husband, Mike has cooked this so many times, each time with love and memories of his Mom. One time I tried to suggest maybe adding a few things to it-“no thank you, no thank you”. Another time I tried to help by cutting the cheese-wrong when he does it they have to be perfectly cut to melt correctly. Lesson learned, you can’t mess with a family favorite-this is delicious and awesome in every bite!
Colby Jack Macaroni & Cheese
2lbs elbow macaroni
2lbs Colby Jack Cheese, sliced in 1/4 inch thin rectangular pieces
Butter
1/4 cup Milk
Pepper
- Cook macaroni al dente about 7 min, drain and pour cold water to stop cooking.
- Butter casserole dish.
- Put half of the macaroni in the casserole dish.
- Top with Colby Jack and pepper.
- Put the rest of the macaroni on top.
- Top with remaining Colby Jack and pepper.
- Pour milk over the top.
- Cover and cook at 350 for 40 min.
- Remove cover and cook at 425 for 5-10 min to brown top.
