Mexi-Corn

8 Ears of Corn, stalks removed

2 Tbsp sour cream

2 Tbsp mayo

2 Tbsp lime juice

1 Tbsp chili powder

1 Tbsp Tajin seasoning

Feta Cheese

  1. Cook corn the way you like; boiled, microwaved, or better yet throw it on the grill.  
  2. Whisk everything but the cheese and corn together and brush on hot corn. Sprinkle with feta cheese. 

Tip: This makes a great salad, remove corn off the cob by slicing with a knife downwards into a bowl and mixing together.
