Spanish Style Rice

Makes about 5 cups

1.5 cups Basmati Rice 

1 Tbsp vegetable oil

1 pkg Goya Sazón Culantro & Achiote 

2 Tbsp pepper

2 Tbsp minced garlic

1 Tbsp salt

1 sweet onion

2.5 cups chicken broth

2.5 cups (1 can) Rotel cups diced tomatoes and green chiles

3/4 cup frozen peas

  1. Sauté onion in oil on low for 30 minutes.
  2. Add rice and sauté for 10 min stirring often to toast and release flavor.
  3. Add in all other ingredients except peas.
  4. Bring to a boil. Reduce to med-low simmer and cook covered for 25 min. Stir in peas and cook for 5 more min.
