Makes about 5 cups
1.5 cups Basmati Rice
1 Tbsp vegetable oil
1 pkg Goya Sazón Culantro & Achiote
2 Tbsp pepper
2 Tbsp minced garlic
1 Tbsp salt
1 sweet onion
2.5 cups chicken broth
2.5 cups (1 can) Rotel cups diced tomatoes and green chiles
3/4 cup frozen peas
- Sauté onion in oil on low for 30 minutes.
- Add rice and sauté for 10 min stirring often to toast and release flavor.
- Add in all other ingredients except peas.
- Bring to a boil. Reduce to med-low simmer and cook covered for 25 min. Stir in peas and cook for 5 more min.
