Rockin’ Stir Fry Veggies with Chicken

I love cooking with my Dad in the kitchen.  I learn so much.  Yes I have to bring a little extra patience.  He has patience with cooking.  I do not.  I am a throw it together and try it.  He is patient and methodical and makes some of the best food I have ever tasted.  We listened to some good music while making this stir fry so-Rockin Stir Fry sounds about right.  

My Dad’s secret ingredient is always love. He makes the best rice you have ever tasted!  He also believes in garlic bread with every meal 🙂

Rockin Stir Fry Veggies with Chicken

Serves 4-6

2 carrots cut on bias (about 1/2 cup) 

2 stalks of celery with leaves removed cut on bias (about 1/2 cup)

1 cup diced green beans cut on bias

1/4 cup vegetable oil

1 red pepper, seeds removed and diced

2 medium size chicken breasts, cut on bias 1/2 inch strips 

2 Tbsp Sesame seeds

2 Tbsp Sesame oil

1 can (8oz) water chestnuts, liquid drained and discarded

  1. Saute chicken first in oil until 165 degrees and remove.  
  2. Saute carrots, celery, and green beans until al dente (a little undercooked with a crunch).
  3. Add red pepper and water chestnuts for just a couple of minutes.  
  4. Mix chicken back in and add sesame oil and sesame seeds and saute for just a few more minutes.
