What I love about this appetizer tray is it is using a couple of similar ingredients in each app. It makes it more budget friendly. I have made this twice now, both times to rave reviews and no leftovers. 😊
You can use a nice board or as pictured I used a baking sheet with parchment paper which worked great.
- Fiesta Crisps
- Jicama Sticks
- Cucumber Bites
- Black Bean Pinwheels
- Guava & Pepper Cheese
Fiesta Crisps
- Place parchment paper on baking sheet and sprinkle a pile of fiesta or Mexican style shredded cheese.
- Roast at 400 for about 5 min. It might take a few min longer wait until edges crisp.
- Let cool 5 min and remove with a spatula.
Jicama Sticks
- Peel and slice jicama in sticks.
- Roll in Tajin Classico Seasoning.
Cucumber Bites
- Peel and slice in rounds.
- Dip in Tajin Classico Seasoning.
Black Bean Pinwheels
- Drain a can of black beans discarding liquid and smoosh with a fork.
Mix in a handful or two of Fiesta or Mexican Cheese. Lightly sprinkle Tajin Classico Seasoning in the mixture. - Spread mixture on tortillas.
- Roll tortillas up and put in fridge for 30 min.
- Remove and slice into pinwheels.
Guava & Pepper Cheese
- Slice pepper cheese in cubes.
- Slice Guava paste in cubes (it’s sticky sometimes I use a cheese knife).
