Apple Vanilla Pancakes

1 large red apple, cored and diced

Pancake mix

1 tsp vanilla

1 tsp cinnamon 

1/2 tsp nutmeg

1 Tbsp butter

  1. Make pancake mix for 4-6 pancakes as per box directions or your favorite recipe. 
  2. Sauté apple in butter, cinnamon and nutmeg for 15 minutes. Turn off heat and stir in vanilla. 
  3. Let mixture cool for 15 minutes then stir into pancake batter.
  4. Cook pancakes and serve with your fav syrup.
