“Eggcellent” Maple Sandwich

I had bought Maple Syrup to serve to guests at a breakfast I was hosting. Now what to do with the leftover Maple Syrup.  I had two ideas an appetizer (link below) and a breakfast sandwich.  

“Eggcelent” Maple Sausage Sandwiches

Makes 14

Pancake Mix

Maple Syrup

14 Sausage Patties

14 Eggs

Non-stick spray

Salt & Pepper

Shredded Cheddar Cheese

  1. Make 28 mini pancakes according to box directions except substitute some of the water for syrup.  For my batch I used a Walmart Brand Box, 2.5 cups of pancake mix and it called for 2 cups of water, I used 1 cup of water and 1 cup of maple syrup.  
  2. Cook your sausage patties thoroughly in a pan.
  3. Spray your 9×13 glass baking dish with non-stick spray.  Whisk your eggs and salt & pepper  in a bowl and pour into the pan.  Bake at 400 for about 20 minutes until cooked.
  4. When eggs are finished cut them into 14 squares.  Or you can use a round cookie cutter, which I did.  Then I used the extra edges on some of the sandwiches.  
  5. Lay your egg piece on a mini pancake, top with sausage and a little shredded cheese and another pancake.  
  6. Wrap tightly with saran wrap and freeze.
  7. When ready to enjoy, remove saran wrap, wrap in a paper towel and microwave until hot, about 1 min 45 seconds.

Tips:  In the future I will flatten out the sausage patties before I cook them.  I also think a nice slice of Cheddar Cheese would work better but I had shredded and it was good just a little messier.  My husband loved them and said they were great on their own, for me I like a little maple syrup dip on the side.
