Rice paper
An assortment of ingredients like;
- Lettuce, cabbage or coleslaw or a combo, shredded
- Carrots, sliced matchstick
- Cucumbers, sliced matchstick
- Shrimp, sliced in half lengthwise
- Hot Honey Pickled Radishes (recipe link below)
- Your favorite sauces (my favs recipe links below)
- Put hot water in a pie plate or large container.
- As it becomes manageable (still very warm), dip your rice paper in. Don’t leave it in or soak it, just a quick dip, hold up and let extra water drizzle off and then put on a cutting board or a paper plate.
- Add your choice of fillings – don’t over fill.
- Wrap the bottom over once, wrap your sides in and then finish wrapping your roll.
Funny story, we were asked to bring a dish to pass at work. Well, I thought, I will bring a dish but not to pass. I brought everything for everyone to make their own Fresh Spring Rolls. I was super excited to share a few knife skills and how easy it can be to make these versatile rolls. We didn’t have a lot of time but I squeezed in what I could. Some of my co-workers really picked it up quick. Others walked by the teaching table a couple of times before getting the nerve to try it. They learned like I have, that it’s all about trying it, it doesn’t have to look perfect, it will taste great – the looking perfect part comes with practice. We talked about different things you could put in these from sweet to savory. One of my fav variations is a southwest spring roll with black beans, a little rice and corn that I told everyone about. A friend at the table was all in and said he will make those and pair with his Corn “Riblets”. Now that sounds delicious!
