3 cups Greens (Collard, Kale etc.,)
1/4 cup brown sugar
1/4 cup apple cider vinegar
1 Tbsp minced garlic
1 tsp garlic salt
1 cup veggie broth
1 big slice diced ham
- Mix all ingredients together and simmer with cover on for 20 minutes and cover off for 10.
Optional; garnish with red pepper flakes.
I have don’t think I have ever cooked greens before, I have eaten them a few times and enjoyed them though. So tonight was the night. I went to the store and had read that they have a lot of sand. I picked up a bunch of Collards and the sand was like being at the beach. Yikes, weeknight not for me right now. I grabbed a bag of mixed clean greens, paid a little more for the convenience of course.
After researching a few ways folks cook these I learned a few things. First off whatever you do don’t call them Southern Greens unless you follow a true Southern Green recipes, those have been passed down from generation to generation. Many will have a turkey leg in them which sounds delicious.
I am also trying to use a lot of what I have at home lately so the only thing I bought was the bag of greens. We had leftover smoked ham so I diced that up and tossed it in. For the veggie broth I had some but if I didn’t I would have easily used a cup of chicken broth. Not sure if I would have even tried beef broth.
Once you start cooking they go from a luscious green leaf to a wilted darker veggie. Not sure how good they look but you have to get passed that to enjoy the many nutritional benefits as well as if you add the right ingredients they taste pretty good!
Pretty good, I don’t know if I will ever have “great” greens but these are pretty good and definitely worth making again.
