Feel Better Breakfast

A friend of mine had just come home from the hospital and I wanted to bring her a little breakfast.  Something “healthyish” mixed with some fun.  I knew I had to get creative because often when we get together there is a ton of super good rich style celebratory food and a “little” wine.  Having the “Feel Better Breakfast” instead of what we normally had didn’t change a thing.  We still had a great time together enjoying breakfast and just being thankful for her road to recovery and our friendship.

  • Plastic Cups
  • Napkins, colorful
  • Plastic forks, knives and spoons
  • Aluminum Foil
  • Souffle cups with lids

I made everything the morning of but some if can easily be made ahead.  The Turkey Scallion Patties can be made a day ahead or even sooner if you want to freeze them.  Same for the Baked Egg Bites.  I often freeze mine.  The muffins can be made a day or two ahead, I haven’t tried freezing them yet but am pretty sure that would work as well.  For the Greek Layered Yogurt Treat I made that right before I walked out the door.  

You can put the Baked Egg Bites and Turkey Scallion Patties in the oven right before you leave and serve when you get there if it’s close. Otherwise just use their oven to do a quick reheat.  I put everything in throw away tins for easier carrying and making clean up a breeze.  

Whether your bringing this to a friend after an illness or maybe just a pick me up or a regular get together the key is to bring everything.  You don’t want them or you to have to do to much when you get there.  You want that time to listen and talk and share some good memories and plan more for the future.
