Breakfast Dessert Side Dishes

“Healthyish” Cinnamon Carrot Muffins

Makes about 18 muffins

2 eggs

¾ cup apple sauce

¼ cup oil

½ cup honey

1 Tbsp cinnamon

1 tsp nutmeg

2 Tbsp Baking Powder

½ tsp Baking Soda

½ tsp salt

1 ½ cup grated carrots, chopped

1 cup rolled oats

1 1/3 cup flour

½ cup raisins

½ cup pecans, chopped

Muffin liners

Bake at 400 degrees in muffin liners in the muffin pan for about 15-20 minutes.

Note; this is a dense muffin with lots of flavor in every bite.  It isn’t very sweet, so if you like sweet, top with a cinnamon glaze after baking or even a little peanut butter.  I served mine with cinnamon glaze in a little soufflé cup on the side.  For a quick cinnamon glaze just whisk together some powdered sugar, milk and cinnamon.
