1 lb of ground turkey or leftover turkey finely chopped
4 scallion stalks
1 tsp dried parsley
½ tsp salt
1 Tbs Herbes de Provence
½ tsp pepper flakes
2 Tbsp minced garlic
2 Tbsp oil
1 egg
- Chop up the white part of the scallion and the green part keeping separate.
- Saute the white part of the scallion in the oil in a pan over medium heat to brown slightly. Remove cooked scallion with a slotted spoon and place in bowl.
- In the bowl add the rest of the ingredients and mix by a spoon or hand until well mixed.
- Divide into small patties for breakfast size or larger for a sandwich.
- Saute in oil left from cooking scallions, cook until 165 degrees.
- Serve on their own or with some hot sauce.
