Chicken Sausage with Apple Cider Veggies

8 Chicken Apple Sausages, sliced in rounds

2 Sweet Potatoes, peeled and chopped

1 Zucchini, chopped

1 lb of mini sweet peppers, seeds removed cut in rounds

1 green apple, peeled and diced

1 cup apple cider

3 Tbsp mustard

1 Tbsp vegetable oil

1 Tbsp garlic powder

1 Tbsp onion powder

1 tsp salt 

1 tsp pepper 

2 tsp cinnamon 

  1. Sauté sausage in vegetable oil over medium high heat.
  2. Remove and set aside. Add all other ingredients and bring to a boil.
  3. Turn to medium high heat and cover stirring occasionally for 10 minutes. Add sausage back in and serve with sauce drizzled over the top.

Optional; Serve over rice. If you like it sweeter add some brown sugar. More savory whisk in a little barbecue sauce.
