Pork & Carrot Ginger Bowl

1 bunch scallions

1 pkg (10 oz) matchstick carrots

1 Tbsp ground ginger

¼ cup Bachan’s Japanese Barbecue Sauce

1 Tbsp Sesame Oil

1 Tbsp Honey

1 tsp Teriyaki sauce

1 tsp salt

2 Tbs minced garlic

1lb ground pork

Cooked rice

  1. Chop off the ends of scallions and discard. Dice the white scallion parts and the green parts and keep separate. 
  2. Cook the white scallions in the sesame oil over low heat to soften. 
  3. Add the pork and cook until done.
  4. Mix in the carrots, ginger, Bachan’s, honey, teriyaki, salt and garlic and bring to a quick simmer.  Reduce heat to low and cook for 3-5 more minutes.  
  5. Top with Scallions & serve over your favorite rice.
