BBQ Hush Puppies

1.5 cups cornmeal

1 cup flour

2 tsp salt

2 tsp baking powder

1 tsp baking soda

3 Tbsp sugar

3 Tbsp BBQ Seasoning

1 egg

1 cup milk

2 Tbsp white vinegar

3 Tbsp honey

Non stick spray

Oil for frying

BBQ Sauce

  1. Mix dry ingredients in one bowl.
  2. Mix all wet ingredients in another bowl (except oil of course).
  3. Make an opening (well) in the dry ingredients and slow whisk in the wet ingredients.
  4. Refrigerate dough for 1-2 hours.
  5. Heat oil for frying.
  6. Spray a small scoop with non-stick spray and scoop out batter into the oil.  
  7. It only takes about 2-3 minutes on each side or total if a full submerge to be golden brown.
  8. Remove to paper towel lined plate and serve with BBQ sauce.  

Tips:  If your oil is too hot, quickly add more oil.
