Dinner

Cajun Garlic Shrimp

1 lb peeled and deveined large shrimp

2 Tbsp Cajun Seasoning

2 Tbsp Olive Oil

2 Tbsp minced Garlic

2 Tbsp Lime Juice

Salt and pepper

12 wooden skewers, soaked in water for 30 min to overnight

Non-stick Spray

  1. Toss the shrimp, cajun seasoning, olive oil, garlic, lime juice and salt and pepper together mixing well.  Let marinate for 15 minutes.
  2. Skewer shrimp 4-5 per skewer.
  3. Preheat Grill on medium high and spray with non-stick spray.
  4. Grill until shrimp start to turn pink and then flip after about 3 minutes.  As they start to completely turn pink and curl slightly they are done, about 2-3 minutes. They should be about 130 degrees.

Food Tips:  Don’t let your shrimp marinate for more than 15 minutes or so because the acid in the lime juice will start to cook them.  Shrimp can wobble a bit on a single skewer so you can always double skewer them.  If you use metal skewers, no need to soak.  We soak wooden skewers in water to prevent them from burning on the grill.
