1 lb linguine
1 lb cooked shrimp, tails removed
1 pkg (9oz) Baby Spinach
1 orange or red pepper, seeds removed & diced
1 Tbsp vegetable oil
1 cup chicken broth
1 cup pasta water
1 large tomato diced
2 Tbsp garlic powder
Salt & Pepper
Parmesan Cheese
Red Pepper Flakes
- Cook linguine about 2-3 minutes less than directions call for. When draining, save 1 cup of pasta water and set linguine aside.
- Sauté pepper for 2-3 minutes in oil over medium high heat. Add tomato and sauté another 5 min.
- Stir in pasta, pasta water, chicken broth, garlic powder and salt and pepper and cook for another 3 min.
- Stir in shrimp and spinach, cover and cook for another 2-3 minutes.
Serve with Parmesan cheese and red pepper flakes on the side.
